First green on the Assyrtiko block this morning, a touch ahead of last year. Arid volcanic island, fierce winds and intense sun. If a cold night lands we'll be out before dawn.

Winemaker
Mineral, saline Assyrtiko from ungrafted vines in kouloura baskets. The estate behind this lot is named only to enrolled members; until then you're backing the region, the style, and a verified track record — not a label.
We kept the planting records. Block by block you can read which year went in and why — the early rows on volcanic ash, pumice, and lava with no clay (aspa), the later infill, the one parcel nobody can explain.
“Bud break came on schedule this year. Arid volcanic island, fierce winds and intense sun — I'm watching the canopy after last week's weather. Fruit set looks even.”
— the winemaker, updated this month
Mineral, saline Assyrtiko from ungrafted vines in kouloura baskets. I pick on flavor, not numbers, and I'd rather make less and mean it.

Pruning finished — weeks of work, every cut by hand. The old vines on volcanic ash, pumice, and lava with no clay (aspa) still look sharp going into the season.
